The summer is certainly upon us, and what better way to enjoy the sunshine than with a cold, sparkling drink in your hand. Imagine sitting on our retreat terrace reclining in a comfy lounger overlooking the sea with the perfect G&T or glass of fizz in your hand…
If you can’t make it to the Scarlet this summer, here are our favourite drinks to enjoy alfresco which are easy to recreate at home.
Firstly, the perfect G&T…
Tarquin’s Gin & Tonic (using Gin from Cornwall)
Tarquin’s Gin is made by an independent, family company handcrafting Gin and Pastis in tiny batches (the old-fashioned way) by the coast of north Cornwall. A contemporary take on a classic London Dry, Tarquins use fragrant handpicked Devon violets and fresh orange zest to deliver an aromatic sensation unlike any other. The result is comparable to stumbling upon a beautiful orange blossom in the middle of a crisp, dry pine forest.
Fill a high ball glass to the top with ice
Add 35ml Tarquin’s Gin,
A squeeze of lime and
Fever Tree tonic water
Garnish with a twirl of orange peel a slice of lime and a lime juice rim
Chase Gin and Elderflower
Chase is a family owned, single estate distillery, who have been creating fine spirits since 2008 from the produce grown on their farm in Herefordshire. The story of Williams Elegant Gin begins with vodka. It is a relatively unknown fact that gin is made from vodka, so, unlike other gins, Williams Elegant is truly single-estate from field to bottle, and within the botanic are Brambly apples which gives it a very unique taste. The result is a full bodied, sharp, yet fruity gin with tears and true provenance.
Perfect for an aperitif before an alfresco dinner, or simply on its own perhaps enjoyed with some nuts or olives, refreshing and tasty it’s our summer drink of choice!

But for those of you that aren’t Gin drinkers, there is nothing like an indulgent glass of fizz, think summer berries and lively bubbles. It’s simply a taste of summer…
Mas De Daumas Gassac Rose frizant (France)
A small independent family, the Guibert Family were anxious to conserve the wild beauty of the High Valley du Gassac, most especially the wild garrigue. That’s why the vines are planted in magical glades hidden in the dense, forest-like garrigue that dominates the countryside. Some 50 types of vine grow in these clearings – a total of 50 hectares.
The result of these well looked after grapes is a sparkling wine perfect for the sunshine – low in alcohol and filled with summer berries aromas, fine bubbles and a fresh taste, Sante!
Nyetimber Rose (West Sussex, UK)
Nyetimber craft their wines according to the traditional method, aging them for extended periods of time and giving the bottles sufficient post-disgorgement time before release. Since each and every decision along the way has an impact on the eventual flavour of their wines, they are careful to do everything themselves. Through this love, care and attention you end up with a red rosé coloured sparkling wine with tiny bubbles, aromas of Mango, red cherry and current flavours.
Elegant and light but with some beautiful characterestics this is the perfect alfresco drink to enjoy for a celebration, or just because your worth it!
