Cornish fairings recipe

Cornish fairings are sweet and spicy ginger biscuits that have been enjoyed in Cornwall for over a century and are a firm favourite with coffee at the Scarlet. Fairing used to be the name for any edible treat bought at a fair and the Cornish version became famous in Victorian times.

Method:

  1. In a mixing bowl, soften the butter then add all the dry ingredients, mix together and then add the sugar and golden syrup.
  2. Roll into pieces of the mixture into 20g ball and place on a baking sheet. Make sure they are spaced apart because they will spread out during cooking.
  3. Cook for 10 minutes at 150 degrees c.

You will need:

  • 500g plain flour
  • 1 teaspoon salt
  • 10g mixed spice
  • 5g ground ginger
  • 5g ground cinnamon
  • 25g baking powder
  • 35g bicarbonate of soda
  • 250g butter
  • 250g caster sugar
  • 300g Golden syrup
