Cocktails to accompany seafood

Much has been said and written about pairing wines and beers with different dishes to complement and enhance the flavours of the food. But what about cocktails? Here are some delicious cocktail recipes which complete seafood dishes perfectly…

Summer Negroni

A summer tipple that works well with most fish dishes, particularly gurnard, pollack and monk fish.

Method:

  1. Crush the gooseberries and apple in a cocktail shaker (use a wooden pestle if necessary).
  2. Add a scope of ice cubes and the measures of gin and liqueur and shake well for about a minute.
  3. Double strain into a short tumbler over ice and garnish with a slice of apple and a gooseberry.

You will need:

  • 50ml Tarquins Gin
  • 20ml Chase Elderflower Liqueur
  • 6 good size goose berries
  • 1/3 of an apple cut into slices
  • Dash of angostura bitters

Lavandula

Perfectly complements scallops, oysters and other shellfish.

Method:

  1. Add all of your ingredients to ice in a cocktail shaker and shake well for roughly 20 seconds.
  2. Double strain into a chilled martini glass and garnish with blackberries or raspberries – which ever are in season!
  3. To make lavender syrup boil two parts water to one part sugar.
  4. Once the sugar is dissolved bring off the heat and decant.
  5. Add the lavender and leave to infuse over two days and then strain.

You will need:

  • 50ml Black Cow Vodka
  • 25ml Cointreau
  • Good dash of lavender syrup

Elderflower Gimlet

A lovely drink with a bouillabaisse, lobster or crab.

Method:

  1. Add all the ingredients to ice in a cocktail shaker and shake vigorously until the shaker is frosty.
  2. Strain into a tumbler over ice and garnish with a slice of apple and sprig of mint.

You will need:

  • 50ml Tarquins Gin
  • 25ml Chase Elderflower Liqueur
