Springboard future chefs awards

We’re really proud to say that the talented young chef, Anna West of whom our Junior Sous Chef, Henry Osbourne has been mentoring these past few months has made it to Springboard’s Future Chef Awards!

Anna West from Penair School is only 13 year’s old and has already made it through heats at her school, the semi-finals in Truro, the Cornish finals at Padstow Seafood School and recently the regional South-West finals at River Cottage – and now she will be battling it out for the title at Westminster Kingsway College in London on Monday 23rd March.

Henry has been working as her mentor for the past six months, when he would come in to her school to give her tips and go over her menu choices. He has tutored her on how to plate up a dish, ways to save time and design dishes, kitchen skills such as knife skills, about the current trends in food, and all-important time and organisation skills. Now that it is getting so close to the final they meet up every day to go over the finer details.

The menu which has got Anna through all of the regional heats she designed herself. Inspired by her family trips in the campervan to the Alps she designed a two-course dinner with an alpine theme – warming tartiflette with layers of potatoes, bacon, onion, cheese and cream and delicious crepes. Henry has been working with her on her new two-course menu especially for the final (which is currently top secret). During the Truro heat, Anna didn’t actually make it through, but Springboard given her attention to detail, her handwritten menu, and attention to cutlery, crockery and even tablecloths gave her a wild card – and she has soared through the rest of the heats.

Springboard helps young people achieve their potential, nurtures unemployed people into work and helps to support disadvantages people into sustainable employment within hospitality, leisure and tourism. The charity provides education and learning in schools, specialist careers advice, skills development, pre-employment training, work experience and mentoring, and Debbie Wakefield, one of the Red Hotels Directors, is the Hotel Sector Lead of the Cornwall Springboard management board.

Future Chef was developed by springboard in 1999 to encourage young people into the food industry. Now a year long programme, young people aged 12-16 are mentored by local industry professionals, engaging the young chefs and inspiring careers in hospitality. Now over 9,000 young people participate each year in the national Future Chef awards, and Anna has made it to the final 12.

So now it is just down to the final on 23rd March. We all have our fingers crossed for her!
