Executive Head Chef Tom Hunter and his team celebrate this time of year, working with our local producers and handpicking the freshest ingredients that best satisfy their appe-tite for seasonality, considering the elements that best come together for our Spring Five Course Tasting Menus. Our wine expert, Jake Henderson and his team have also been indulging in their passion, by pairing the elements of Tom’s mouthwatering dishes with exceptional wines from some of our favourite artisan producers.

The Scarlet’s Spring Gourmet Tasting Menu is a bravura, impromptu affair. Tom creates the menu daily to make the most of the particular ingredients our suppliers have delivered to the kitchen door that morning. Spring usually means lamb, hand-dived scallops, sea bass and mussels, broccoli, beetroots, celeriac, radishes, rhubarb, Jerusalem artichokes, wild garlic, chicory, asparagus, cucumber, spinach, sorrel, watercress and kholrabi.
